I have a new WIAW today and I tried to change it up so I could share some new eats with y’all! I’m also trying to make a concerted effort to eat more vegetables and so that might be apparent! Also, the dinner I had tonight was microwavable broccoli & chicken nuggets because Craig had to go to Charlotte for work today and I didn’t feel like cooking, but since that’s superrrr boring I am sharing what we had for dinner on Monday instead.
Breakfast: I had my coffee before my workout, and then for breakfast I had 3 scrambled eggs with spinach, feta, and chipotle cholula’s.
Lunch: For lunch I had a flour tortilla wrap with mayo, mixed greens, black beans, green peppers, tomatoes, and shredded cheese. The black beans and green peppers were actually left over from our fajitas (which I’ll share in a sec)
Mid-afternoon Snack: I got a craving for my Van’s protein waffles (I guess I was missing them from not having at breakfast!) and I added peanut butter, honey, and blueberries. That kept me full til dinner!
Dinner: Again this was from Monday but it was wayyyy better than what I had tonight, lol. Easy Fajitas! We used chicken that we marinated in fajita seasoning, and added in black beans, green peppers, cheese, cilantro, & guacamole.
Dessert: What do you think? 😉 Watermelon popsicle of course! If these are just a summer flavor I am going to be LOST when they go out of season haha I am praying they are a year-round flavor because I’m addicted.
