Back with another What I Ate Wednesday post except this time I’m not sharing a new dinner recipe, but instead a new smoothie recipe! Here we go….
Breakfast: First thing this AM I had a cup of coffee before my workout. Then after I had my second cup with my breakfast. Lately I mix in half a scoop of this collagen powder into the coffee. Then, I mix about 3/4 cup of unsweetened vanilla almond milk with just a splash of my current favorite creamer (right now it’s the Silk Oat Milk Oatmeal Cookie flavor) in a measuring cup. Pop that into the microwave for 1 minute to steam the milk, then froth it with this handheld frother. Pour over coffee! Breakfast was oatmeal with peanut butter & blueberries.
Lunch: Mixed greens & spinach (chopped with kitchen shears…it’s a game changer for salads just trust me. no one wants to shove huge pieces of lettuce into their mouth) with air fried chicken nuggets, plus Bolthouse Farms Yogurt Ranch dressing. ALSO Y’ALL, I got a little crazy today and added some cucumbers to my salad!!! Buckle up! Lol.
Afternoon snack #1: Coconut Brownie Chunk BUILT bar. I love these bars. Afternoon snack #2: Mango Pineapple Greens Smoothie
Ingredients:
- unsweetened vanilla almond milk
- frozen mango
- frozen pineapple
- strawberries
- banana
- 1 scoop protein powder
- handful spinach
Blend all together & voila! Add more ice if you want it to have a thicker consistency, or peanut butter!
Dinner: Teriyaki Turkey Bowls (the recipe is in this post – it’s probably Craig’s favorite meal! In this mix I used bok choy, purple cabbage, shredded carrots, & green onions)
Dessert: Watermelon Outshine popsicle…SOOOO GOOD!
