So if y’all haven’t noticed by now (I *did* forewarn you about this) but I eat a lot of the same things over & over. I have been trying to eat different things for dinners, however, to share different ideas with y’all there! So here’s today’s WIAW featuring my daily eats plus an easy baked salmon & broccoli recipe.
Breakfast: First thing this AM I had a cup of coffee before my workout. Then after I had my second cup with my breakfast. Lately I mix in half a scoop of this collagen powder into the coffee. Then, I mix about 3/4 cup of unsweetened vanilla almond milk with just a splash of my current favorite creamer (right now it’s the Silk Oat Milk Oatmeal Cookie flavor) in a measuring cup. Pop that into the microwave for 1 minute to steam the milk, then froth it with this handheld frother. Pour over coffee! Breakfast was oatmeal with peanut butter & blueberries.
Lunch: Mixed greens & spinach (chopped with kitchen shears…it’s a game changer for salads just trust me. no one wants to shove huge pieces of lettuce into their mouth) with air fried chicken nuggets, plus Bolthouse Farms Yogurt Ranch dressing.
Afternoon snack #1: Two Good Vanilla Yogurt + dark chocolate chips + drizzle of honey
Afternoon snack #2: Coconut Brownie Chunk BUILT bar. I love these bars. Each flavor is a little different in terms of nutrition stats if you care, but per bar they are roughly 150 calories, 17g of protein, & taste like a candy bar. Pre-dinner cocktail: It’s cinco de mayo soooo I’m having a margarita! You can find my recipe here.
Dinner: Baked Salmon & Broccoli – this recipe is SO easy. All you do is line your baking sheet with tin foil, lightly grease, then place the salmon skin side down and the broccoli on the pan. You can really season however you’d like, I simply squeezed a bit of lemon all over the pan and then did some black pepper. Bake at 450 degrees for 12-15 minutes or until salmon is flaky. *note: I used microwavable broccoli here, I steamed it first so then it just gets crispy faster in the oven since it’s already cooked, but you can definitely use raw broccoli, you might just want to put that in first, then take it out and add the salmon for the last 12-15 minutes.
Dessert: On repeat!! White Macadamia Nut LUNA bar with 2 pieces of Dove dark chocolate on top….pop it into the microwave for about 40 seconds on 50% power. Let the bar sit for a minute afterwards so the chocolate continues to get all melty.
