Breakfast & Coffee: First thing this AM I had a cup of coffee before my workout. Then after I had my second cup with my breakfast. Lately I mix in half a scoop of this collagen powder into the coffee. Then, I mix about 3/4 cup of unsweetened vanilla almond milk with just a splash of Natural Bliss vanilla creamer in a measuring cup. Pop that into the microwave for 1 minute to steam the milk, then froth it with this handheld frother. Pour over coffee! Then breakfast was a protein pancake (recipe below) with peanut butter & blueberries.
Protein Pancake:
- 1 scoop vanilla protein powder of your choice (I’m using this kind right now)
- 1 mashed banana
- 2 egg whites
Yup, that’s it! You can add in blueberries or chocolate chips or whatever you like. Mix together, cook over medium-low heat, flip when the top starts to bubble.
Lunch: The protein pancake kept me full til lunch! Lunch was mixed greens + edamame + air-fried chicken nuggets + Bolthouse farms Green Goddess dressing
Afternoon Snack #1: These bars I order from Amazon are my second favorite bar after the Built Bars y’all know I love. I’m still waiting on those to get delivered. Anyways, I have these on subscription from Amazon for the best price. I like the vanilla yogurt ones…haven’t tried any of the other flavors so I can’t speak to those!
I also had a handful of Cheez-its straight from the box 🙂
Afternoon Snack #2: Special K cereal w/ strawberries. I don’t normally have cereal in the house (because I cannot be controlled around cereal) but my mom brought this over the weekend and left it. It was a great snack w/ fresh strawberries.
Happy hour: heavy pour of Kendall Jackson Chardonnay (the best).
Dinner: Ground turkey cooked on the stove with some olive oil and seasoned with Grill Mates Montreal Steak…paired with roasted zucchini and sweet potatoes. SO easy. The sweet potatoes were actually frozen and came cubed already (I hate cutting up sweet potatoes) and I just sliced the zucchini. Baked for 450 degrees for about 20 minutes. Seasoned with salt & pepper! Also put a little Bolthouse classic ranch dressing on top.
Dessert: handful of white chocolate covered pretzels!
