Breakfast & Coffee #1: First thing I will have a cup of coffee. Lately I mix in half a scoop of this collagen powder into the coffee. Then, I mix about 3/4 cup of unsweetened vanilla almond milk with just a splash of Natural Bliss vanilla creamer in a measuring cup. Pop that into the microwave for 1 minute to steam the milk, then froth it with this handheld frother. Pour over coffee! Then breakfast was 2 slices of toast with whipped cream cheese.
Lunch: Mixed greens + avocado + edamame + air-fried chicken nuggets + Bolthouse farms classic ranch
Afternoon snack #1 + coffee #2: These bars I order from Amazon are my second favorite bar after the Built Bars y’all know I love. I ran out of those and TBH I waited too long to place an order. I need to remember to order BEFORE I run out, lol. But they should get here by the end of the week. Anyways, I have these on subscription from Amazon for the best price. I like the vanilla yogurt ones…haven’t tried any of the other flavors so I can’t speak to those!
Afternoon snack #2: Two good yogurt + peanut butter + dark chocolate chips + banana + honey. Snack of my dreams!! SO GOOD.
Dinner: Baked Lemon Salmon with Angel Hair & Asparagus // Sounds fancy but honestly everything is so easy to make!
Ingredients:
- 2 salmon filets (I usually get 1.5lbs)
- 1 box angel hair of your choice
- 1 bunch of asparagus
- 2 lemons
- lemon pepper seasoning
- olive oil
- salt
- basil (I just used the finely chopped kind from the seasonings aisle, you could also use fresh basil)
Directions:
- Wash asparagus & trim off white ends. Then cut into 2-3 inch pieces
- Preheat oven to 450 degrees and also start to boil a pot of water for the pasta
- Line a baking sheet with tin foil & lightly grease
- Once water is boiling, add angel hair to cook
- Place salmon skin side down onto sheet as well as the asparagus to the same sheet surrounding the salmon. Squeeze lemon juice over top, sprinkle basil + add lemon pepper seasoning & salt to taste
- Bake for 12-15 minutes or until salmon is flaky and cooked through. This will depend on how thick your salmon is so just be mindful of that – a thicker piece will take longer to cook and vice versa.
- Drain pasta and once the salmon is done, remove the skin. I think it’s easier to get it off once it’s cooked but you can also do it before cooking.
- To plate: put angel hair down first with a drizzle of olive oil & a sprinkle of the lemon pepper seasoning, salt, lemon juice, & basil. Add asparagus to the pasta and gently toss to combine. Lastly add the salmon to the top of the dish.

Dessert: So the grocery store had angel food cake on buy one get one free…that is an offer you just do NOT pass up, lol. So my dessert this week has been angel food cake with some whipped cream & strawberries!
