If you’ve been a blog reader for a while (like, a long while) then you might remember the good old WIAW posts…aka What I Ate Wednesday. Back in the beginning of my blog (circa 2010) it was primarily focused on food and what I ate, and so on those blog posts, I would show every thing I ate for the day. Seems kind of silly, but I kid you not, still the most highly and frequently requested topic y’all send me is food ideas. So, I decided to bring back the What I Ate Wednesday posts to serve as the answer to that call. As a disclaimer, I am not a registered dietitian and I am not saying that you should eat what I eat. I am simply showing you what I’ve had so you can get ideas for snacks and dinners if you’re stuck in a rut or looking for something new!
On a similar note, I am hoping these posts will encourage me to change it up too, at least for dinners, since that can be an area where I really lack motivation to find new recipes and so we end up eating the same things over and over. (Sorry, Craig.)
Okay on that note, let’s get to it!
What I Ate
Coffee #1: First thing I will have a cup of coffee. Lately I mix in half a scoop of this collagen powder into the coffee. Then, I mix about 3/4 cup of unsweetened vanilla almond milk with just a splash of Natural Bliss vanilla creamer in a measuring cup. Pop that into the microwave for 1 minute to steam the milk, then froth it with this handheld frother. Pour over coffee!
Breakfast: I have always loved oatmeal and I probably always will. Today I just had Bob’s Red Mill rolled oats (I mix with water and cook in the microwave) and stirred in some peanut butter. I usually have a banana with it, but Emma took the last one and I ended up going to the store later in the afternoon for more…you’ll see 😉
Coffee #2: repeat coffee #1 from above and another 1/2 scoop of the collagen to equal the full serving for the day.
Lunch: Normally I will have eaten a mid-morning snack, but I got caught up on the phone trying to order a new washing machine and dryer for the new house, so around 11:30 I just decided to eat lunch. Mixed greens & spinach (chopped with kitchen shears…it’s a game changer for salads just trust me. no one wants to shove huge pieces of lettuce into their mouth) with feta & air fried chicken nuggets, plus Bolthouse Farms Yogurt Ranch dressing.

Afternoon snack #1: Stopped by the store, got bananas. Check! Made a yogurt bowl with Two Good vanilla yogurt, sliced banana, and topped with some coconut/pumpkin seed/chia seed clusters and a drizzle of honey. Two Good yogurt is the besttttt y’all.
Afternoon snack #2: Snack plate! Blue Diamond Nut Thin Cheddar Cheese crackers with sliced turkey, olives, and a Laughing Cow cheese wedge.
Dinner: Teriyaki Turkey & Bok Choy Bowls – quick, easy, pretty healthy, & really good!
Here’s how to make them:
Ingredients:
- ground turkey
- bok choy
- green onions
- shredded carrots
- brown rice (or rice of your choice) – for this I used a microwavable rice packet that had steamed broccoli in it
- minced garlic
- teriyaki sauce
Directions:
- Wash & pat dry the bok choy and green onions. Separate the white bottoms of the green onions (discarding the roots) and the leafy green tops. Slice the bok choy into 1 inch slices…you can keep the white bottoms and leafy green tops of the bok choy together.
- Cook your rice if it’s the old fashioned kind….if it’s microwavable, wait until the end so it’s hot.
- In one pan, heat a little olive oil and minced garlic over medium heat. Once it’s hot, add the bok choy, whites of the green onions, and shredded carrots. Drizzle teriyaki sauce over top (I don’t measure this, just do it to taste)
- In another pan, heat a little olive oil over medium heat and add the ground turkey. Drizzle another bit of teriyaki sauce over the meat as it cooks.
- Once the meat is no longer pink, add it to the pan with the veggies and stir all together.
- Plate with brown rice on the bottom, then add the teriyaki stir fry & turkey mix over top. Garnish with the green onions & enjoy!
Dessert: Pretty full from dinner…just having a piece of dark chocolate for the sweet tooth.
