On Instagram I asked if you all would be interested in seeing what I eat for lunch on any given day and the response was an overwhelming yes (I, too, enjoy knowing what people eat!) and so I documented it for a week! Admittedly this week ended up not being the most creative week’s worth of lunches I’ve ever had, but sometimes simple is best. It’s definitely the easiest! And as a new mom I eat what, and whenever, I can so easy is key! But really, a meal being quick and easy is always preferred in my opinion!
MONDAY: Huge salad with spinach, romaine, shredded carrots & radishes, smoked turkey with Panera balsamic vinegar dressing
TUESDAY: steamed zucchini “noodles” topped with ground turkey and olive oil + salt & pepper. I mean to top this with an avocado but I was so hungry I ate it and forgot about the avo! + an RX chocolate chip protein bar | I made a bunch of ground turkey earlier in the week when I made dinner one night, 2 lbs went into our Mexican Lasagna (linked recipe below) and then I cooked 1lb to throw into lunches or other quick dinners through the week.
WEDNESDAY: Turkey sandwich on honey wheat bread with mayo and spinach. Ate this in the car on the way to my doctor’s appointment! Needed something quick I could eat in the car.
THURSDAY: Leftover Mexican Lasagna we had for dinner earlier in the week (recipe from @heymadinelson Instagram highlights)
FRIDAY: Steamed broccoli bowl with salmon and cilantro avocado dressing
That’s it! Some weeks I feel like I make really creative, beautiful lunches and then some weeks, like this one, I just see what I can throw together. I try to sneak veggies in there most of the time!! 🙂 And if I eat lunch and I’m still hungry I usually have an RX protein bar to go with it and it sort of feels like a little dessert since it’s chocolatey.
