On my Q&A post from Tuesday one of the questions I got was asking for easy, go-to dinners. So in today’s post I’m going to share some of the meals that make frequent appearances around our house and also some that I might not make as much but that I do whip out on occasion that are also easy 🙂
Go-To’s:
Taco Bowls
- 1 package ground turkey or ground beef
- 1 taco seasoning packet
- 1 can black beans
- 1 bag romaine lettuce
- 1 green pepper
- 1 can diced tomatoes
- Optional: brown rice
- Avocado or guacamole for topping
To make: Cook ground turkey or beef with taco seasoning packet (use instructions on packet). While that starts cooking, you can heat up the black beans and tomatoes (drain both) in a saucepan or in the microwave. I like to dice my pepper and put it in with the turkey towards the end so it cooks but it’s not super squishy. I like a little crunch! If you are cooking the brown rice, this will serve as a bottom layer to the bowl but we skip this sometimes. Once everything is cooked, layer in the romaine lettuce and all of the beans, meat, tomatoes and top with avocado or guacamole if you like! We also eat it with tortilla chips on the side 🙂 Shredded cheese and Cholula’s chipotle sauce are two other great toppings!
Sweet potato, brussels sprouts, & lean protein (usually either ground turkey, grilled chicken, or salmon)
This is as easy as it gets really. I usually just microwave the sweet potatoes since that is the easiest and quickest method. For the brussels, I clean/quarter/season them (usually with olive oil & rosemary) then saute on the stove until crispy (not burnt…be sure to cook on med-low heat or they burn). Then Craig will maybe grill chicken or salmon or I will make ground turkey on the stove in the same seasoning as the brussels. Easy & good for you!
Veggie Bowls
We try to eat meatless a few nights a week and when we do we usually go for veggie bowls. This can be any veggie you like and it varies from week to week and season to season with us. We usually use brown rice or quinoa as the base, then usually a black bean or kidney bean, then anything from steamed broccoli, snap peas, green beans, zucchini, peppers, etc. The list goes on and on. We usually just drizzle a little olive oil on top and season with some salt and pepper and done!
Spinach Salad with Rotisserie Chicken
I think this was one of the first things I ever made for Craig! Pick up a rotisserie chicken at the store and I recommend pulling the meat off while it’s still warm, it’s just easier. Then in the bowl goes:
- Spinach
- Green Beans (steamed then refrigerated just because I like everything to be cold in salads usually)
- Sugar Snap Peas (same as above)
- Shredded Rotisserie Chicken
- Diced Green Pepper
- Lemon (I like to squeeze half a lemon on top)
- Olive oil
- Salt & Pepper

Creamy Tomato Spinach Pasta – we have been making this a ton. So much I’ve basically memorized it. I’d say at least every other week we have it, sometimes every week! It’s that good. That way certain ingredients I can use before they expire (cream cheese for example) and I love to throw in chicken!

Overall we are pretty simple about what we eat!
