Hi friends! This week I am re-sharing certain posts from last year or even the year prior. As I spend a lot of time this week on a new project to serve you, I didn’t want the blog to go radio silent. So, these throwbacks are ones I think serve as a great reminder and deserve another posting!! I especially love this easy protein pancake recipe. Enjoy!
These fiber filled blueberry protein pancakes are some of my favorites to make, and they’re so easy! You can make a bunch of smaller ones like I did in these pictures (they’re about 4-5 inches in diameter, so not TOO small!) or a couple big ones!! This batch was actually half and half. Craig wanted one big pancake and I wanted a few smaller ones. Follow your pancake-loving heart 🙂 I’m going to give you the recipe for one large pancake for one person, then just double or triple or whatever the recipe as you see fit to serve extra people, or make them ahead of time and keep them in the fridge for quick breakfasts throughout the week!
Fiber Filled Blueberry Protein Pancake Recipe
Ingredients:
- 1 scoop vanilla pea protein powder
- 1 mashed banana
- 1 tbsp ground flax seed
- 2-3 egg whites
- Splash of unsweetened vanilla almond milk to help stir
- Cinnamon to taste
- A bunch of blueberries!!
Directions:
Grease pan with coconut oil and place over medium-low heat. Combine all ingredients in a bowl except blueberries. Pour batter on pan and then drop the blueberries onto each pancake. Let cook on one side until the top starts to bubble. Take a spatula and flip the pancake and cook on the other side. Top with your favorite things: honey, maple syrup, almond butter, more fruit…whatever!
