Okay y’all…you’ve seen me post this on Instagram stories and every time I have, I get SO MANY DMs about people needing the recipe. Well, if you know me you know I don’t *really* cook anything that requires much effort, but this one may take the cake for #lazycooking (BTW, I think that’s going to become my new favorite hashtag). So here it is, The Easiest Cauliflower Teriyaki Chicken “Fried” Rice recipe ever.
I’ll give a little background and say I love frozen veggies. Our freezer is stocked with them and they just make it easy to throw together a pretty healthy meal in a short amount of time.
Here’s what you’ll need to make it the easy way:
So basically…cook all those things in the microwave. If you don’t like to use a microwave you can get the freezer veggies that you have to cook on the stove top instead, that should work totally fine it might just take a bit longer to cook but no biggie. Or of course you could get fresh and chop them all up and get cauliflower and rice it yourself, but hey I said this is the EASY way so this is what you get 😉 Once they are all steamed in the microwave, heat 1-2 tbsp of olive oil over medium-high heat on the stove top, then add veggies to cook and drizzle with a little low sodium teriyaki sauce.
Here’s my super easy hack for this recipe: for the chicken, buy a rotisserie chicken that’s already cooked, and once you get home, immediately pull the meat off of it (while it’s still warm, it’s way easier to get all the meat off that way) and just keep it in an air tight container in the fridge until you’re ready to make this.
Okay back to the veggies. Let those cook, stirring occasionally, then usually after about 5-10 minutes or until everything seems nice & hot and well combined, I add the chicken in. I don’t want that over the heat too long, just long enough to warm up since it’s already been cooked and I don’t want it too dry. I’ll add a little more olive oil and teriyaki sauce to the pan when I add the chicken, then keep stirring.
It’s pretty much done once the chicken is warmed up…should only take a few minutes 🙂
And voila! The Easiest Cauliflower Teriyaki Chicken “Fried” Rice you’ll ever make. This serves 2 adults and always has enough leftovers for lunch!
