Y’all ready for the easiest cookie recipe ever? I’m about to share my Protein Peanut Butter Cookies with y’all but I wanted to let you know why I love them — besides that they are so easy to make!
- They’re packed with protein so a great post-workout snack
- They keep you full from the combo of healthy fats & protein
- They have a good dose of potassium from the bananas
- They don’t taste like protein cookies — the peanut butter and banana mask any protein taste 🙂
- They are good for any time of day! Sometimes I like these as breakfast with my coffee or sometimes as a dessert
- They’re delicious
- I’m just rambling now…bottom line is they’re delicious, easy to make, and a great snack to make for the week!
Ingredients:
- 2 overripe mashed bananas
- 1 cup creamy peanut butter
- 2 scoops vanilla protein powder (I use this kind)
- 1/4 cup liquid egg whites
Directions:
- Preheat oven to 350 degrees
- Mash banana and then add peanut butter. Stir until combined
- Then add in protein powder and stir until completely mixed in
- Lastly add the egg whites. Stir until everything is kind of a whipped texture!
- Lightly spray parchment paper and place on cookie sheet. Spoonful onto parchment and try to keep it in a round form. This does not have to be perfect 🙂 We will flatten into cookie shape later.
- Bake for 12-15 minutes or until just soft to the touch. You don’t want to overcook, then they will be dry and crumble!
- Use a fork to gently push down into cookie shape.
- Cool on cookie rack and then enjoy!
