I go on different kicks when it comes to what I eat for breakfast…sometimes I’m in the mood for oatmeal and I eat that nonstop for a few weeks. Sometimes it’s ezekiel bread with egg whites and almond butter. But currently, it’s one of my favorite staples: the protein pancake. So I figured I’d share my base recipe for the protein pancake and then specifically, the Blueberry Protein Pancake with Collagen recipe that I’ve been making lately!
The best part? You only need a few ingredients!
Here’s the base pancake recipe:
- 1 scoop protein powder of your choice (I like this kind in vanilla for pancakes)
- 1 egg
- 2 egg whites (if from egg) or 6 tbsp boxed liquid egg whites
- cinnamon to taste if desired
- 1 scoop collagen powder (I like this kind)
If desired, you can add in things like blueberries, pumpkin pie spice, coconut, chopped pecans, banana…really anything you want!
Then just stir everything together while you heat a nonstick pan on low-medium heat on the stove. Spray with nonstick cooking spray then pour the batter in. Be patient so it does not burn. Once it starts to bubble on top you can see if it’s ready to flip with a spatula. If you can get the spatula underneath without the batter coming off, you can go ahead and flip over carefully! Then just let cook on that side a couple minutes. Remove and enjoy!
So so easy to do and only takes a couple minutes. I’ve even been known to make this for dessert and put a little bit of Halo Top, Enlightened Ice Cream, or peanut butter on top! Yum.
