Hey loves! I hope y’all had the best weekend. I have to say we had a pretty great one! It was our first at home in a few weeks, so we had a nice balance of relaxing at home and also getting out to explore together. Going to share the deets of our weekend right here!
Craig was actually home sick from work Thursday and Friday, so I knew we’d be doing something low-key Friday. Well, to be honest we would have been doing something low-key anyways LOL but it was for sure gunna be a cozy night in. Friday night Craig ate his soup & crackers while I made my first ever cauliflower crust pizza (from scratch!) and I had a little wine too. I am sharing the recipe for the pizza this week on the blog so stay tuned for that! You won’t wanna miss it. So good and SO EASY.
We watched the new Avengers movie and both really liked it! I also had a little bit of unpictured Halo Top for dessert.
Saturday we woke up around 8, had coffee & breakfast, and planned our day’s adventures. Luckily Craig was feeling better! Lately I’ve been loving this breakfast combo: ezekiel toast, topped with almond butter or PBfit (powdered PB, whatever I’m in the mood for that day) and egg whites sprinkled with cinnamon.
This was made with 3 egg whites, sometimes I only do 2, again just depends on how hungry I am!
We decided we wanted to go on a hike somewhere…so then the question became “where?” Unfortunately most all hikes worth doing are pretty far from Charlotte. Crowders Mountain is about 45 minutes away and that’s the closest one, but we’ve done it SO.MANY.TIMES. and it gets so packed…which is why it is so affectionately (not really) nick-named “Crowded” mountain instead. So we decided on Stone Mountain State Park, just around 1 hour and 45 minutes away, to go to a hike. There are also a handful of wineries out there, so we figured a post-hike activity should most definitely involve going to one of those places. So with that, we packed accordingly and hit the road!
The hike was about 4.5 miles round trip and it was so muggy out…we had just enough water to get back to the parking lot! The car’s air conditioning felt amazing and it helped me cool off to change into my winery clothes. And no, by the time we got there I no longer appeared like a sweaty dog. It’s called body & face wipes people…they are my best friends 🙂 That and a little texture spray…and a hat never hurt 😉

We went to Roaring River Vineyards because they had both wine & beer tastings, but we decided we were also kinda hungry so we got the meat & cheese board too. It was the perfect amount without ruining our dinner.
Then we hit the road to head back to Charlotte. Since we had just under 2 hours to drive, I figured we would be hungry for dinner by the time we got back and I was right. So we headed straight to Bad Daddy’s Burger Bar for din. I got the turkey burger on the gluten-free bun with arugula, sautéed mushrooms, jalapeños and a side salad. I also stole a few of Craig’s fries.
The burger actually filled me up, so I just boxed up my side salad (on it was spinach, feta, edamame, & chickpeas) and had it for lunch on Sunday.
Saturday night we were back on the couch, this time we started a new show I’ve heard great things about: The Marvelous Mrs. Maisel which is on Amazon. The creator & executive producer of Gilmore Girls created & produces this show, and we are really enjoying it so far! If you’re looking for something new to try, I recommend 🙂 I have been laughing out loud (Craig too!)
Sunday was pretty chill around the house, we sat together and streamed a church service…we typically prefer to go to church but by the time we got up and moving we were going to be late. So this option is better than not going at all! The rest of the day was boring household chores, getting grocery lists made, checking in with my coaching clients, and otherwise prepping for the week ahead.

I’ve been to Stone Mtn State Park before- such a beautiful hike!! I had no idea there were wineries near there. 🙂

Oh yeah! There are like 4 different wineries out that way! We definitely plan to go back and visit more!
