It should come as no surprise to you (unless you’re new around here, in which case, welcome!) when I tell you that I have a sweet tooth. And that I have no problem giving that sweet tooth just what it wants every day! One of my favorite things to do is make these super easy & quick cookies. They only have five ingredients and between the prep time to cook time, you’ll be having a yummy treat in about 25 minutes.
Ingredients:
- 2 mashed bananas
- 1 whole egg, 1 egg white (this can be vegan by instead using a chia egg)
- 3 scoops of protein powder (I’m using this kind)
- 1 cup unsweetened shredded coconut
- 2 tbsp of peanut butter (or your favorite nut butter!) …This ingredient is really optional! If you have a nut allergey or want a slightly “lighter” version, you can omit this. Then it would be a four ingredient cookie 😉
Preheat oven to 350 degrees. Combine all ingredients together in a large bowl. Grease a cookie sheet with coconut oil or coconut oil spray. Place spoonfuls of the mix onto the sheet. Bake for 12 minutes. They should still be slightly soft when you take them out!
These are a great quick & easy snack to make to have throughout the week too! I like to have them as a little mid-afternoon treat with a little coffee or tea.
