How was y’all’s Fourth of July?! Can we talk about how awkward it is on a Wednesday? I kept feeling like it was the weekend all day yesterday but nope, today’s Thursday and everyone’s back up and back at work. At least it’s a nice way to break up the week, right?? Anyways, going to share some highlights from our Independence Day!
We took advantage of the midweek day off and headed up to the mountains for a little day trip to do one of our favorite hikes, Shortoff Mountain overlooking the Linville Gorge. It was probably noon before we got started, and it was HOT but luckily we had plenty of water.
We stopped and had lunch in that spot in the pic above, watching the boats on Lake James and kinda wishing we were on one 😉 We actually had brought our inner tubes that we use for floating down the river sometimes in case we wanted to get in, but by the time we were done hiking we debated between doing that and going to Fonta Flora, a brewery in the nearby town of Morganton.
Eventually we voted brewery, but sadly enough when we got there, they weren’t opening for another hour and a half! So then we just went home, haha. But we had a yummy dinner to grill waiting on us (and Mav, he was at home too. He isn’t good outside when it’s so hot out so we leave him in the AC).
I didn’t really want to drink much alcohol anyways since I just came from last weekend’s bachelorette party and I have another next weekend, but I did have one can of the lemon flavored Spiked Seltzer on ice before dinner! It was nice and refreshing.
Dinner was burgers topped with avocado & a little A1 steak sauce with a side of sweet potato and grilled zucchini. We don’t really intentionally eat the burgers without buns for low carb reasons or anything like that, we just kind of like it this way! This is one of our go-to dinners but lately with the Blue Apron’s we’ve had, we haven’t done this in a while. It was so good 🙂
The rest of the evening was spent lounging on the couch with some Netflix before bed.
