Hi friends!
Hope y’all had a great weekend. We sure did! We got to spend some more time with family this weekend and boy are we getting spoiled by that. We’ve gotten to see so much of both of our families the past week or so between the beach trips, and then this weekend Craig’s family made a stop in Charlotte for the night because we were doing a surprise 80th birthday party for his grandma. So we hosted everyone at our house that night after the party. It was a little tight but we made it work 🙂 I think we may need a house with another bedroom or two, lol!
Anyways, Friday night we just stayed in, had some wine and made a Blue Apron meal. Cajun Shrimp Tacos! They were so good. I am always torn between just wanting something super easy and sometimes I think the prep work for Blue Apron meals can be a little much (in reality it’s not that much, I just hardly ever make food that requires much prepping at all) but I think it’s good for me to get practice with different recipes! And you certainly enjoy the food you make more I think because you know everything that went into preparing it. While Craig was getting his workout done after work, I sat in front of the TV and chopped up the veggies while I caught up on my recorded reality TV.
That was about half of the veggies we needed for this recipe. It was the easiest of the three meals we got this week so that was good. Also, shrimp tacos are so delicious. WHY are they soooo good?! Craig & I agreed we could have eaten at least 2 more each.

Craig’s brother & fiance arrived later that night and hung out with us a bit before we all headed to bed. The next morning I was the first one up…I set my alarm so I could have time to get up, feed Mav and let him out, make coffee, & have some breakfast before going out on my run. The birthday party was that afternoon and it’s about an hour and a half away from our house so I knew I’d have to get up and get movin’.
Breakfast was a slice of ezekiel bread with peanut butter & a sliced banana with a side of coffee.
Then I set out on my run! Man it was hot already at 930am! And the humidity in Charlotte is just THICK. I should be used to it growing up in the South, and I do pretty well to deal but sometimes it’s just sick. haha.
5 mile run + a half mile walk to cool down, followed by some stretching & foam rolling.
After that I showered & got ready and we headed out to grab some lunch and head to the b-day party!
We stopped at Bad Daddy’s Burger Bar for lunch, I got a turkey burger with no bun, topped with pepper jack cheese, arugula, and mushrooms plus a side of sweet potato fries. I knew we’d be eating dinner around 5 and we were having BBQ, so I didn’t get a huge burger with the works for lunch. This meal was just right for the middle of the day! No picture because I was starving & forgot 🙂

Wore some new stuff from VICI this weekend! I love a knotted tank so I threw a little knot in that baby with these high waisted shorts (that are SUPER stretchy, praise!!). So yep, head to toe VICI haha…but hey they have so many cute things and the price point won’t make your wallet scream in agony. Only bad thing is stuff sells out so fast. But, if a product you love is sold out, you can click “email me when more are available” and they will let you know if more come back in stock.
I kept my phone in my bag most of the afternoon so we could spend time with fam and be more present! Be we stayed there until about 730 or so I think then we headed back to Charlotte. We just hung out on the couch, had some wine and chatted for a couple hours before we went to bed! The next morning we were up and went to brunch before the rest of the Carters were heading back home. Again failed at taking pictures, but I got an egg white omelette with spinach, mushrooms, and salsa on top with a side of hash browns and a big ole fluffy biscuit with apple butter. HEAVEN.
Our afternoon plans involved taking Maverick out to McDowell Nature Preserve on Lake Wylie for a little hike and to let him swim!! He LOVES to swim, but he’s getting older–will be 10 in August!– so I wanted to get him a life jacket to wear. He loves the water but doesn’t know his limits and since he doesn’t swim regularly, he will just jump out into the water and swim so far away but then struggles to make it back. This way the life jacket keeps him floating if he gets tired lol.
Silly boy had the most fun. He passed out in the car on the way home and barely got off his bed all night!! A tired dog is a happy dog.
We made a pit stop at Clean Juice on the way home, we hadn’t eaten since brunch and it was almost 4pm…we were also hot and thirsty so a smoothie sounded perfect!
I love that Clean Juice has scripture everywhere.
We both got the large “The Double One” (it’s my fave!) and it hit the spot. When we got home we bathed Maverick and then we went on a little walk around the neighborhood, before coming home to shower & prep din.

Sunday evening we watched a little Netflix before heading to bed to start a fresh week. It was a nice weekend at home and we were so lucky to get to have fam around too!
Next week’s weekend recap is going to look a little different…I’m heading to Florida for a bachelorette party 🙂 LOL.
