I may be #basic as can be but it’s true: I loveeeeeee me some avocado toast. And 99% of the time, I just make it myself at home! I think I have figured out the key formula to making the best possible at-home avo toast meal 🙂
So I’ve learned from trying to take this shortcut…you need to actually TOAST your bread. It’s just not the same if you don’t. Also, the crispiness from the toast provides the perfect texture and it makes sure your bread can actually hold everything you may put on top!
My bread of choice is ezekiel bread. To toast, you can use a toaster obviously if you’re a normal person that has a toaster. We actually DON’T have a toaster lol. So I put it in the oven on 350 degrees for about 10 mins to toast.
Meanwhile, I’m mashing up the avocado and cooking my over-easy eggs on the stove. I happened to break one of the yolks this go round, so only one runny yolk for me but usually I aim to have one per slice. I’ve been lazy before and just scrambled an egg or even made a mug egg but to me the flavor is just better when it’s cooked on the stove with a little runny yolk. I think the trick to the avocado toast is: don’t cut corners! (I’m mostly telling myself this, since I’m known to get to the point where I’m starving and cannot be patient enough to make food correctly)
But really, just look at that yummy egg:
Put your mashed avocado on the toast, spread and flatten with a fork. Put your egg on top of each slice, and then this last step is optional but highly encouraged: add as much Trader Joe’s Everything but the Bagel seasoning as possible.
