I’ve gotten lots of feedback that y’all want to see more of what I eat on a regular basis so I’m definitely going to be sharing more of that! I hope to share at least one food blog post per week with a new recipe or snack idea. Today I’m going to share something that I love for breakfast, but I have been known to make it for dinner too 😉 Breakfast for dinner is a thing. It’s called brinner and I highly recommend it. Anyways, let’s do this! Waffle Wednesday: Crushin’ on Kiwi!
A protein waffle feels like such a special treat to me. It’s exactly the same recipe as my protein pancake, but since it takes (minimal) more effort to get out the waffle maker and subsequently clean it, I usually just do a pancake. I’m trying to eat ASAP, ya know? I don’t need all these extra steps getting in between me and my food. Anyways, when I have a few moments I love to make a waffle instead, cause waffles are pretty and the squares do a great job of holding your toppings!
Kiwi’s are so pretty. They are *almost* too pretty to eat. And those blueberries!! Bluebs are my favorite fruit y’all. Might be a boring choice but they are. But back to Kiwi’s for a second…cause this post is about the kiwi specifically. I typically don’t buy them at the store because like, you have to peel them. And that’s one of those extra steps I mentioned earlier getting between me and my food. BUT I’m dramatic and it only takes about 1 extra minute to get the skin off. Patience grasshopper…it is worth it! (So I remind myself, every time I grab a kiwi). But seriously do it. Cause kiwi’s have a ton of great health benefits including helping digestion, aiding sleep, and fighting cancer.
Also, they taste good 🙂
Here’s my waffle base recipe:
- 1 mashed banana
- 1 scoop protein powder (I use this kind)
- 1 tsp ground flaxseed
- 2-3 egg whites
- optional: collagen peptides
- add a splash of almond milk if needed to get the right consistency!
- dash cinnamon!
Spray the waffle maker so your mix doesn’t stick, pour it in until it’s done (I think they cook best over low heat!) then top with your favorite things!! In this case, it’s sliced kiwi, blueberries, vanilla coconut yogurt, and unsweetened shredded coconut! Sometimes I like a little local honey or maple syrup on top too 🙂
Aaaaaand now I’m hungry and I’m going to make this for breakfast. Ha!
