One thing y’all told me you wanted to see more of over here on BHC is some more ideas for healthy and/or easy dinner recipes! I can promise you if I share a recipe, it will be easy. I can’t handle very complex recipes, lol. And I mean, we are all very busy people right? So the easier the better especially if it’s also healthy.
Enter: Roasted Veggies & Turkey Sausage
So for this, you can easily change in and out the veggies you prefer, but for this I used squash, zucchini, eggplant, and broccoli. Then I got premade/precooked italian style turkey sausage to go with it.
Ingredients:
- 2 zucchini, sliced
- 2 squash, sliced
- 1 eggplant, sliced & quartered
- 1 stalk broccoli
- 4 turkey sausage links, sliced
Directions:
Preheat oven to 425 degrees, Put tin foil on baking sheet and drizzle with olive oil. Place veggies on top and drizzle more olive oil on top, plus add salt & pepper. Bake for 30-40 minutes or until veggies are at desired crispiness level. Then remove the tray and add the sausage. Since it’s a precooked sausage you just need to throw it in for about 5 extra minutes to heat it up. That’s it!!
This was enough to serve both Craig & me and I had lunch with the leftovers the next day.
