One of the things y’all told me you wanted to see more of on BHC this year was healthy snack ideas/healthy recipes. This post is an easy recipe that can be either a cookie or a muffin…I tried making it a cookie first, and it was delicious, but the consistency and texture was more muffin-like, so the next batch I made into muffins. It works either way. The recipe is made with Vital Proteins collagen creamer in the coconut flavor. This is actually a non-dairy collagen creamer for your coffee, but it is derived from coconut milk so I figured, why not give it a try in baked goods?
Here’s the recipe:
- 1 cup almond or coconut flour
- 2 eggs
- 2 tbsp honey
- 3 scoops coconut collagen creamer
- 1 tbsp ground flaxseed meal
- 1/2 ground tsp cinnamon
- 1/4 tsp vanilla extract
- 1/8 tsp baking soda
- 1/2 cup unsweetened coconut flakes
- 1/4 cup unsweetened vanilla almond milk
Preheat the oven to 350 degrees. I mixed all the ingredients together at the same time except for the honey. I like to do that last because I think it helps distribute it more evenly. I made the cookies just on a nonstick tray that I sprayed with a little coconut oil. Cookies baked for 8 minutes.
Slight differences for the muffins:
For the muffin recipe I added a scoop of vanilla brown rice protein but mostly because I was running low on almond flour. I don’t think the protein powder is necessary but if you want a little extra protein kick it would do the trick! I also added one more egg and another scoop of collagen to the muffin recipe too. I was just trying to make a few more than the cookies, and the muffins are bigger so just increased the recipe a bit like that. Also, the muffins baked a touch longer at 10 minutes. I am not master chef as you can see, but both came out great!
Topped the muffins with a few coconut flakes 🙂
