Happy Thursday loves!! Today I’m sharing an Asian Inspired Salad Recipe that I love and make all the time. It’s super easy to put together and I usually make a huge portion of it so Craig & I can eat it for lunches throughout the week. We like it on it’s own as a meatless meal, or sometimes we top with chicken or, for a quick & easy lunch, tuna or salmon packets like these.
I’ll be honest this recipe was inspired by a “Chinese Chicken Salad” recipe that I used to order at a restaurant in college all the time. I wanted to recreate it so I could have it whenever I wanted 🙂
I buy a lot of the ingredients in pre-packaged ways but if you wanted to buy the corn, edamame, brussels, etc. and steam & shred them on your own, more power to ya. I’ll admit that would make the “quick & easy” aspect of this recipe a little less applicable but follow your heart!
Asian Inspired Salad Recipe:
Ingredients:
- Salad mix of your choice, I use the spinach & kale salad mix
- 1 bag steamed corn
- 1 bag steamed edamame
- 1 bag shredded carrots
- 1 bag shredded brussels sprouts
- 1 cup brown rice
- 1 cup quinoa
- Dressing: I like any kind of sesame ginger dressing for this. We use this kind.
- Optional add ons: grilled chicken, tuna, salmon
Directions:
Prepare all ingredients per packaging instructions, layer into salad then toss and serve. You are now a master chef 🙂
All tossed & ready to eat!
