Today I’m sharing some of my favorite quick easy healthy breakfast recipes that are oh so yummy! I try to make time in the morning to have breakfast before I head out for work, but life happens/I may press snooze too many times and I run a little later and don’t have time to sit at home. But I won’t ever skip a breakfast…hello I love food so missing meals is not an option… so instead it’s easy to pop some of these in a tupperware or another container to take it with you!
7 Quick Easy Healthy Breakfast Recipes
Oatmeal
(I bet you saw that coming.) I probably eat oats more than any other breakfast and it’s definitely my staple if I ever need to take breakfast on the go. I pour the oats into a mason jar if I’ve just made them that morning, or, overnight oats is easy to do and just grab & go from the fridge. For overnight oats I just put in 1/2 cup rolled oats, equal parts almond milk, 1 tsp chia seeds and then put in the fridge overnight. The oats absorb the milk! Put any toppings in that you would like 🙂 Sometimes I like to put peanut butter and jelly on top, and another favorite is egg whites and blueberries.
Protein Pancakes or Waffles
I can’t have a list of quick easy healthy breakfast recipes without including this favorite of mine! The base of this recipe is the same and I’ve used it for years. You simply need a waffle maker if you want it to be a waffle 🙂
- 1 scoop vanilla protein powder of your choice (I like this kind a lot)
- 1 mashed banana
- 2 egg whites
Yup, that’s it! You can add in blueberries or chocolate chips or whatever you like. Mix together, cook over medium heat, flip when the top starts to bubble.
I wrap these up in foil and take with me to have at my desk…sometimes I even like to make these for lunches!
Avocado Toast
I love to mash up half an avocado over toast, sprinkle with red pepper flakes, and sometimes an egg on top is delicious too and gives that protein punch.
Homemade Protein Bars
Another go-to of my quick easy healthy breakfast recipes. You can find my recipe for these here! You can make these over the weekend and just take them with you for the perfect quick, easy, healthy breakfast on the go! They’re great as a snack too!
Bread with Peanut Butter, Banana, and Honey
These are my favorite pre-run breakfasts!
Smoothies
Obviously these are the most convenient to take with you if you’re on the go. I like to make them with almond milk, kale, pineapple, banana, avocado, & vanilla brown rice protein powder. Don’t be scared of the green!!! You can’t even taste it 🙂
Omelets
They aren’t very easy to take on the go and keep warm, but, if you do have time, these are some of my favorite quick, easy, healthy breakfasts to have that just make me feel full and healthy and it’s a great way to pack in veggies in your breakfast. Just chop them up and throw them in the omelet! Tomatoes, asparagus, onions, peppers, spinach, anything you want. Sometimes I do just an egg white omelet or if I’m really hungry I’ll throw a whole egg or 2 in there for more staying power.

I love protein pancakes. When I was marathon training , round (2013/14) I used the recipe for the stack of protein pancakes topped with Fage (I believe) that I got from your blog. So good! I love oatmeal too but can’t get into overnight oats :/

that is awesome Megan!! Love that you use that recipe. It’s so good and I love throwing yogurt on top!!! I agree sometimes the overnight oats consistency is tough…regular oatmeal is for sure my go-to!!
