Just thinking about these muffins makes me hungry! These were perfect to have for a quick breakfast in the morning or as pre-workout snack! They didn’t last long around this house though since Craig and I both loved them. The recipe made 9 muffins…a few had already been eaten before I could get pictures!
Anyways, this recipe is super easy and is only a handful of ingredients. If you have a food processor, then it will be even MORE easy for you. If not, you’ll just have to do a bit more of the stirring work 🙂 We have this food processor and I have really liked it so far!
I made these gluten free by using gluten-free all purpose flour but you can use any flour you prefer!
Ingredients:
- 1 cup gluten free all purpose flour (or flour of your choice)
- 1/4 cup vanilla protein powder
- 1/4 cup melted coconut oil
- 2-3 ripe bananas, mashed
- 2 whole eggs
- 1/4 cup honey
- 1 tsp baking soda
Directions:
- Preheat oven to 350 degrees
- Line muffin tray with muffin wrappers and give a quick spritz of nonstick spray
- Combine all ingredients into your food processor and use the s-blade attachment to combine all the ingredients. This won’t take long at all with the food processor! If you don’t have one, simply combine all ingredients in a large bowl and stir until well combined.
- Spoon batter into muffin tray and bake for 12-15 minutes.
- Allow to cool in pan for a few minutes then cool on cooling rack.
- Enjoy!
Feel free to throw some mini dark chocolate chips in for a little extra treat 🙂
