This recipe is definitely one of my go-to’s because it’s super low maintenance and easy. Aka my kind of recipe!
Feel free to use your favorite vegetables to roast them, but my usual combo is sweet potatoes and brussels sprouts! I often buy the pre-cut sweet taters because it makes my life a little easier but that’s up to you. I did slice the brussels sprouts myself 😉
Preheat your oven to 420 degrees. Line a sheet pan with tin foil and spread out the veggies and chicken on evenly. Drizzle olive oil over top and sprinkle with your choice of seasoning. I like salt, pepper, and turmeric!
Bake for about 20-30 minutes or until the chicken is cooked through. Cooking time will depend on the thickness of the chicken breasts so if you have thin ones it may be less!
Perfect for an easy dinner and there’s lots of leftovers so lunch the next day is also taken care of! Enjoy!
