Is there anything much better than warm banana bread straight out of the oven? That is a trick question. The answer is yes, if you put chocolate chips in the bread it does make it better. Melty chocolate makes everything better.
This recipe is gluten free and can be dairy free, depending on what chocolate chips you use or if you omit them completely.
Ingredients:
- 1/3 cup melted coconut oil
- 2 eggs
- 4 medium-large mashed bananas
- 1/4 cup almond milk
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 cups gluten free all purpose flour
- mini chocolate chips…as many as you want! (optional, try any mix-ins you want!)
Directions:
- Preheat oven to 325 degrees and grease loaf pan
- Whisk together eggs and melted coconut oil, then add in mashed bananas, milk, vanilla extract, baking soda, salt, and cinnamon and whisk those together as well
- Stir flour and chocolate chips in until just combined
- Bake for 55 minutes and let cool before slicing
