Something about fall just really gets me into the mood to bake some goodies and wear leggings and sweaters and drink tea and be cozy! I guess that’s pretty standard, huh?
These Baked Pumpkin Spice Oatmeal Protein Bars are a healthy breakfast or snack option that you can prep and bake in less than an hour. Bonus: your entire house will smell amazing!!
I used this Sunshine Protein in Vanilla from Designer Protein. I’m a Designer Protein Ambassador, so you can click here to get 20% off your order now! I think you could also use a vanilla whey protein or even an unflavored protein. I personally just like to use vanilla to bake.
Ingredients:
- 2 cups rolled oats
- 2-3 scoops Sunshine Protein Vanilla Protein Powder (this is up to you how much extra protein you want!)
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- 1 tbsp cinnamon (plus extra to taste!)
- 1/4 tsp salt
- 1 cup pumpkin puree
- 2 tbsp coconut sugar
- 1 egg (I would use 2 eggs if you like your bars more cake-like. these are dense)
- 2 tbsp coconut oil (melted)
- 1 tsp vanilla extract
- 1/2 cup unsweetened vanilla almond milk
Directions:
Preheat oven to 350 degrees. Grease a 9×13” glass baking dish and set aside.
Mix all of the dry ingredients together in a medium bowl. Add in the wet ingredients and stir until fully combined.
Spread mixture evenly into the baking dish.
Sprinkle some extra cinnamon, pumpkin pie spice, & coconut sugar on top of mix if desired for cinnamon sugar/pumpkin spice topping. A little coconut oil can serve as the “glaze” if you want, too.
Bake at 350 degrees for 35-40 minutes or until the oatmeal is slightly browned on top. Let cool for 15 minutes before serving, or slice up and freeze to use later!
To make these even sweeter, feel free to experiment! You could throw in some dark chocolate chips, pumpkin spice chips, or even cinnamon chips to make it a little more of a treat 🙂
