Perhaps you’ve heard that the majority of the east coast is under snow. We made it out okay… probably only 3 inches or so but with a layer of ice. But it was nice because we had a work from home day on Friday. Then that night, we made chili and had red wine and enjoyed a cozy evening!
On Saturday, I got up and had a huge bowl of oatmeal before Craig and I ventured up to the mountains. We were going to try to cross-country ski, but the roads got a little icky (and the wind chill was -3 degrees at the top of the mountain) so we decided to do a hike closer to where we were that the roads weren’t too bad. We did the Shortoff Mountain trail and had some lovely views on the way up.

Dinner once we got back to Charlotte…a salad from Chop’t and some wine 🙂
in the salad is kale, purple cabbage, quinoa, avocado, olives, feta cheese, chicken tinga, and a lemon tahini dressing.
This morning’s breakkie: Scrambled eggs & blueberries with black coffee.
Today is a rest day but we did take the pups out to walk for a bit! About half the roads/sidewalks are melted and the rest are still very slick!
