I have been pretty busy lately. I used to be boring and have no life and I would blog a lot on the weekends (just being honest, lol) but now I do fun things during the weekend so it’s hard on top of having a full time job to blog every day! I will do it as frequently as possible though, that is my goal! So now I’m catching up a bit…and I wanted to share some of my favorite foods I’ve been having lately for different meals…
1) Overnight oats are a MUST. I prefer an extra 10 minutes of sleep in the morning so making this the night before to just grab on my way to work is what works for me.
Here’s I how I make it:
- 1/2 cup of oatmeal (I like trader joe’s gluten free rolled oats)
- 2-3 tbsp of chia seeds
- equal parts almond milk (or water or milk of your choice)
- put in a mason jar or tupperware overnight!
In the morning I like to microwave it for about a minute or so so that the oats get fluffy 🙂 Sometimes I add some protein powder to it, as well as almond butter, honey, blueberry preserves, etc. The possibilities are endless!
2) Another quick breakfast option is the Jimmy Dean delights…They cook in the microwave in about 2 minutes and sometimes I cook extra egg whites for even more protein and satiety factor!
So yummy. I really love the turkey sausage in the bowls!
3) BUFFALO CAULIFLOWER Y’ALL. I’ve seen recipes all over pinterest about how to make buffalo cauliflower but let’s be honest I’d really rather microwave it in 5 minutes than make it myself if given the choice! These are the Bird’s Eye steamers bags you can find in your frozen veggie section…I made a bag of the buffalo cauliflower and topped with half an avocado for dinner one night…LOVED IT. The buffalo isn’t too spicy but the flavor is really good. I was impressed.

I’d like to also take a moment to recognize today and remember all of those people that were lost in September 11th. I would never be able to type words strong enough to describe how tragic and horrific it all was, but I know today I will be remembering and praying. It’s something that will be on everyone’s minds today and the one good thing I try to think of following the attacks were how good people were to each other after that. Americans came together. It’s sad that slowly dwindled away, but we should always treat each other that way. I, for one, will also use the day as a reminder to take my time, to be a more considerate person, a more helpful and charitable person. It is now the National Day of Service and Remembrance, after all. Love more, hate less. Peace 🙂
