If you used to read my old blog, you are probably quite familiar with the fact that I love protein pancakes and make them all.the.time.
I wanted to share the recipe so you can make it too. Beware…there are only 3 ingredients and it’ll take you about 5 minutes to make.
Ingredients:
- 1 mashed banana OR 1/2 cup unsweetened applesauce, whichever you prefer (I find the mashed banana ones to be easier to flip)
- 1 scoop protein powder (I like Growing Naturals Vanilla Brown Rice Protein Powder)
- 2 egg whites
That’s it! Mix them all together, cook in a pan over medium heat, flipping halfway through. Don’t flip if it feels flimsy or it will break. Lower the heat and wait longer. Low & slow 🙂
Also, the nutrition stats on this are pretty good! For the applesauce version:
- 36g protein
- 13g carbs
- 0g fat (I of course change that when I smother it in almond butter)
Stuff with fruit or chocolate chips and top with anything you like. Here are some of my recent creations:
Almost always involves almond butter and honey on top!!
In fact, I think that this is what I’m going to have for dinner. Even though I also had one for breakfast 🙂
